Halloween Cookies

I realize that Halloween has passed and everyone is enthralled in the coming of Thanksgiving (or more so Black Friday, sadly) and Christmas. However, I spent a lot of time on these cookies and want to share them. You can adapt the cookie decoration to any holiday.


Just a precaution, the icing recipe is NOT a thick icing. The icing is liquid-y and hardens after being spread onto the cookies. It is by no means a royal icing, you'll be able to see in the pictures. Also, plan to make a little more icing than what is given in the recipe because it didn't go very far.

Cookie Ingredients:
- 1/2 c. butter, softened (1 stick)
- 1/2 c. sugar
- 1 egg
- 1 tsp. vanilla extract
- 1 1/2 c. flour
- 1/2 tsp. baking powder 

Icing Ingredients:
- 1 c. powdered sugar
- 2 tsp. milk 
- 2 tsp. light corn syrup (for the shine)
- food coloring

Directions for Cookies:
1) Beat sugar and butter together until creamy. Add in the egg and vanilla, mix until well incorporated. 


2) Add flour and baking powder to the wet mixture slowly. Periodically scrape the sides of the bowl.

3) Put dough into a plastic bag and knead into a ball in the bag. Refrigerate the dough for 20 minutes.

4) Preheat the oven to 350F. Roll dough out to desired thickness/thinness. Cut out desired shapes of the cookies.
    ** I used a knife and freehanded the candy corn. For the pumpkin and ghosts, I used the remaining dough and freehanded them too.




5) Bake for 7-9 minutes, or until the cookies are barely light brown.

Directions for Icing:
1) Stir together the powdered sugar and milk. Then stir in the corn syrup until the icing is glossy. Add more corn syrup to thin the icing or more powder sugar to thicken it up.
2) Divide into smaller bowls, and add the desired food coloring to each bowl.
3) Using a spatula, decorate cookies





It truly isn't a holiday unless I bake something. I spent almost the entire day of Halloween baking. As you can tell, I love baking a lot. I can't wait for Christmas so I can make Christmas cookies.
